  • 1/3 cup sugar
  • 1 tablespoon fresh lemon juice
  • 1 cup old-fashioned oats
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 3/4 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon kosher salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter (melted and cooled)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a 9×9 baking pan with parchment paper, leaving some overhang for easy removal of the bars.
  2. Prepare the blackberry filling: In a medium bowl, combine the blackberries, sugar, and lemon juice. Toss gently to combine and set aside.
  3. Make the crumb topping: In a large bowl, combine oats, sugar, brown sugar, flour, cinnamon, and kosher salt. In a small bowl, whisk together the egg and vanilla. Add this to the oat mixture, and stir. Add the melted butter in two stages, stirring between each addition until fully combined.
  4. Assemble the bars: Press 3/4 of the crumb mixture into the bottom of the prepared pan. Add the blackberry filling on top. Sprinkle the remaining crumb mixture over the blackberries.
  5. Bake: Bake for 40-45 minutes, or until the crumb topping is golden brown and the filling is bubbling.
  6. Cool and slice: Let the bars cool completely in the pan. Use a knife to loosen the edges, then lift the bars out of the pan using the parchment paper. Slice into bars and enjoy!

Notes

For a vegan version, substitute the egg with a flaxseed egg and use vegan butter. For a gluten-free version, use a gluten-free flour blend and certified gluten-free oats.
