  • 1 medium cauliflower head
  • ½ cup butter melted
  • 2 garlic cloves minced
  • 1 cup Italian or plain breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the Oven: Preheat oven to 400℉. Line a large baking sheet with parchment paper. Set aside.
  2. Prepare the Cauliflower: Remove all leaves from cauliflower head. Cut cauliflower into florets, all roughly the same size. You can slice the large florets in half, if needed.
  3. Make the Butter Mixture: Melt butter in a small bowl and add minced garlic. Stir well.
  4. Coat the Cauliflower: Place breadcrumbs, salt, pepper, and Parmesan cheese in another bowl. Dip each cauliflower piece into butter first, then to breadcrumbs. Place each breaded piece on prepared baking sheet.
  5. Roast the Cauliflower: Roast cauliflower for 35 to 40 minutes, or until the breading is golden brown and crispy.

Notes

Ensure the cauliflower is completely dry before dipping to avoid sogginess. You can also add fresh herbs like thyme or rosemary to the breadcrumb mixture for extra flavor.
